This big, dark Farmhouse Ale was initially fermented in stainless steel with our own farmhouse yeast and then inoculated with brettanomyces for its secondary fermentation in the bottle.
Before going to bottle for secondary fermentation, however, it was aged in freshly emptied local Cabernet Franc French Oak barrels for a period of 6 months.
The result is an opaque beer of big malt flavour with a red wine vinous quality and rustic, barnyard finish from the brett. Tremendous depth in profile with contributions from the malt, multiple yeasts and barrels.
Ages well for up to three and a half years, with peak drinkability at 2 years.
